Crémant de Jura is often made from slightly unripe grapes. Temperatures can be cooler, so ripeness levels can be a concern; as a result harvest time is often delayed, usually well into October, to try to acheive the highest possible sugar level. White wine makes up 90% of production with the balancing 10% being Rose. The grapes are predominantly Chardonnay with a supporting cast by Pinot Noir, Rousseau, Poulsard and Savagnin.
Total surface area of production in 2018 was 515 hectares (1,272 acres).
Total production in 2018 was 1.7 million bottles.
