Glossary of Terms

Crémant means creamy. It is a term used to refer to sparkling wines made planting in the Method
Traditionelle outside of the Champagne region. Harvested by hand, maximum yield, density and a
minimum 9 months on the lees are some of the common rules applied to this regulated wine type.

Petillant Spritzy

Method Traditionelle The wine is fermented once in the barrel and then undergoes a second
fermentation in the bottle after the addition of yeast, nutrients for the yeast, and sugar.

Methode Ancestrale A fermentation technique that makes it possible to produce
sparkling wine without the addition of yeast or sugar. The fermentation process is
natural and uses only the yeasts and sugars contained in the grapes.
